Interesting thread.
I have a LOT of guns, but a hurry up unass the place situation I would take my Remington 11-87 SP Police automatic 12ga, and a variety of rounds (slugs, #4 buck, ect) It has rifle sights and I can really get your attention out to 200 meters w/slugs.
For pistol, my custom 1911a1 .45. I am not going to drag around a lot of pistol ammo anyway.
It all depends on where you are at and what is available. Here in Afgahnistan, I would be stuck with our issue weapons which are a variety of AKs and Czech VZ-58 rifles and Glock 17 and 19s.

Springfield Socom with Red Dot, and a Mil-Dot scope (interchangable).
Pistol... I love the 1911 but its ammo cap isn't too great, and when you have hi-cap mags it just makes it bulky and uncomfortable. I think I would go with a FN 5.7 with ballistic tips.

I'd carry a Kimber Stainless shortslide for self defense. For a rifle, give me a Winchester M62 .22LR. Good cartridge for dispatching those tasty rabbits, dogs, squirrels, etc. And in a pinch, can be used for self-defense. You can carry hundreds if not thousands of rounds on you, way more than you can carry of any large bore or 12 g.
Now if I was staying home and fighting to the death, I'll take an M60 with 20,000 rounds of ammo, and an M-79 with lots of HE and WP rounds. Light 'em up and knock 'em down."Activity! Activity! Speed! I greet you."

Glock 17 with internal laser sight and both 17 and 33 rounds mags, and AK. The Ak is the most reliable, has reasonable accuracy up to 150 yards, and I have lots of ammo, both hunting and military steel core. The glock also has never any reliability issues, 9mm is the most available centerfire pistol cartridge, and the Glock is also an accurate weapon.
