Those are some big questions, and not sure that any one person could answer both fully. There were brass-cored EK's, copper-plated iron cores, zinc cores, iron cores, tombak cores, etc., etc.. It's going to take you awhile to gather all of this information. Get a couple of spiral wound notepads and make some extra room in your computer hardrive, maybe even an external hardrive. There's a lot to learn, and a lot to forget while you're learning.
To get started, before regulations came out for the EK makers to make only iron-cored EK's, there were many makers using brass, tombak and zinc for their cores. Some even used neusilber as a coating over the iron, as they did copper also. I have a '123' Beck, Hassinger & Co. with this neusilber layer over the iron core. I have a couple Juncker crosses with zinc cores, S&L's (Steinhauer & Luck) and W&L's (Wachtler & Lange) with brass cores, also an 'L/19' Ferd. Hoffstadter with a brass core. The list goes on and on.

At the moment I know:
F. Orth (EK I with brass core)
O. Schickle (EK I with brass core, EK II with brass and zinc core)
C.E. Juncker (EK I with brass core, EK II with zinc core)
Wächtler & Lange (EK I with brass)
Paulmann & Crone (EK II with zinc core)
Steinhauer & Lück (EK I with brass core, EK II with brass core)
F. Hoffstätter (EK I with brass core)
Klein & Quenzer (EK II with brass or zinc core)
But I believe that some non-magnetic EK's by S&L are post war.

there is a non magnetic cross ,one piece construction on emedals page 11 item # gra936 ( scarce version) that has peak my interest.what do you guys think about this one.and keep the pictures coming on those non magnetic ek1 and ek2. thanks

Getting off track here just a little, here's an example of how many of the 1914 EK's were brass-cored as well. This piece was manufactured post-WWI, around 1925. The 835 stamp indicates that the frame and backplate are at least, maybe more, than 835/1000 parts pure silver. The brass core is just peaking through areas of the crown.
