Notice too, that the history only shows the unit as having 3 companies and the shoulder board button is a "6."

Hmm, do you think the unit history may be incomplete?

Looking through several of the unit histories, for Pionier Bataillone of various types, the usual composition of that size unit is 3-4 Kompanien.

Pionier-Lehr Battalion 2 does mention that the 5th and 6th battalion stayed behind for training

“The battalion was set up on December 10, 1939 in Dessau-Rosslau, Military District XI. This was done by the remnant command of the Pioneer Training Battalion 1. The battalion was intended as a teaching staff for the Pioneer School 2. From June 7, 1940 to July 1, 1940, the battalion was temporarily used as a field force at the Upper Rhine transition. On May 1, 1941, the battalion set up the Pioneer Battalion (motorized) 900 of the army force. In February 1942, the battalion was mobilized again.

        —The 4th, 5th and 6th companies—

remained behind and became the Pioneer Training Battalion 4. The battalion was deployed at Army Group Center in Russia. In the autumn of 1944, it forms the 2nd Battalion of the People's Pioneer Training Brigade 47.
The battalion's replacement position was taken by the Pioneer Training Battalion 4.”

The same link you gave me! At the very bottom where it lists Pionier-Lehr Battalion 2 it has the first 3 companies as you mentioned, but the paragraph below it mentions the other companies.

Is there any way someone can find a roster of the unit? Or know where one may be? Considering that he’s a high NCO maybe even tie a name to the Tunic?

How much of a chance do you think there is to potentially putting a name to this Tunic?

Without a full roster, zero. Even with a full roster, given that troops rotated in and out of Lehr units on a regular basis, it would be at best an educated guess.
