You will need a few in my opinion.
1. Angloia's 3 volume sets on the Heer, Luftwaffe, and Kriegsmarine.
2. Brian Davis' book On the Heer Uniform and insignia.
There are also a lot of other smaller publications that are good too but I believe the above are the best in my opinion for the Heer.
