Help needed with two K98's I've been offered

I would buy the pair for $600 any day of the week. While they're not collector grade rifles they are easily worth that price provided the bores are still good. The days of inexpensive, readily available K98s have long since passed.

600 for the pair is a very fair price. Russian Captures in far worse condition tend to sell for 4-500 a piece. These are fine, also the other rifle does not appear to be missing the buttplate, it's just the flat buttplate. (Rather than the cupped plate seen on the second weapon). Doesn't appear that you'd need to do anything special with the rifles.
