The Unteroffizier in this photo appears to be wearing a custom Bergmütze.

Nice photo showing the tropical tunic in wear Bryant. Yes, the cap could be a custom made piece. Looks to be either faded, or made from similar material as the tunic. Can see a slim darker band were the cap meets the bill. Possibly an old sweat stain, or darker material?

Interesting that his EK II ribbon is looped through the 2nd tunic button.
