Hi,
looking at the dates on the back of the photograph he may possibly have been lost at sea on the 4th Oct 1943 (Picture taken 7 July 43), 4 U boats were lost on the 4th Oct - U279, U389, U422 & U460 so he may well have been on one of those? However he may have been lost on an earlier U boat and the NOK notified on the 4th... we may never know....

Printed dates on photographs are usually done by the photographer or studio. The date would indicate when the print was developed as you have mentioned, the October date could mean anything.
