what is te best way to store/display photos, so they don't yellow and fade?

You'd better ask this in the conservation forum.
But a quick search might offer you some valuable information.
I have secured mine to accid free paper, with accid free photo corners and I keep them in a dry space with constant humidity (low ofcourse)...
