Hi CVRC, the use of a Heer adler in place of the regulation SS sleeve eagle was quite widespread. (You can sometimes see Heer cap eagles used on the schirmutze too)
If you get the chance have a look at the book on Waffen SS RKT published by Bender, here you will find quite a few pics of this practice, even by Knights Cross winners. Sepp Dietrich is of course the most famous SS soldier to do this both with sleeve and cap.
The wearing of the campaign sheild without backing can again be observed in some period photos. Nice pic that you show by the way! Maybe the soldier could not sew and simply took the sheild apart and placed the backing plate inside the tunic sleeve, and then refitted the sheild togther to hold it in place? I do not know why this was done, as there were unit tailors, plus the sheild would be fairly loose on the sleeve and could catch on something and get torn off
