Just wanted to ask, is there a safe, non destructive way to remove spay paint from say leather liner pads made of rabbit skin?

Not sure how much paint you have on there or how thick it is?
However I did remove some thick globs of post War Norwegian paint from a pre '45 leather chin strap and the strap apopears to be fine.
I used Nitromos (paint stripper) generally used for removing paint from wood and metal surfaces, clearly I left the stripper come into contact with the paint for a matter of a few seconds and did not allow it to soak into the leather, I then lifted the paint away using a sharp blade.
Just be aware this stuff is aggressive and I suspect it would harm leather if allowed to soak in or if used on large areas it may cause cracking/drying out.
To be honest if the paint is over a large area you would probably be as well to leave it alone

Paint is lightly sprayed and only on the edge of the pads where they meet the lkiner band.
