The production did not stop in 1940 , the German never waisted anything and used up all their stock of wool ,before producing pants with the new wool.
Furthermore ,they were still available long after 1940 for use with the walkout tunic.
Regarding these pants ,They look good from these pictures ,do you have a shot showing underneath the watch pocket flap ( the bias material). Also the maker seem to be ( I forget his name ) Uniformfabrik Hannover. I have the same ones in mint condition ,but dated 1941.

I have a better feeling about the trousers after the new pictures you posted (especialy the lining and reinforcement stitching that look correct).
About the color, it looks rather fieldgray than stonegray...No ?(but perhaps it's the flash light reflect...).
I agree with you Pierre-Yves, nothing was waisted in the german cloth industry ( that's why you have a stone gray color M43 trousers Harry, what is more recycled wool was also widely used for M43 pants and tunics).
What I didn't like about this trousers was not the color, but the lake of these typical reinforcement stitching details that couldn't be made out on the first pictures.

Buttons
Are the tan buttons plastic? Not a flag on the pants but they may have been added. I have never seen them before. The good thing is that most the fakes have the inncorrectly stamped metal buttons. Nothing wrong with the color, if you can find color photos of POWs at the end of the war they are wearing everything and every shade.
