The stitching on the back of the collar was to hold the internal bias material ,found internally in the collar, in position.
The stitching alone was not done to stiffen or reinforce the collar,that was the job of the bias material,that was sandwiched between the front and back pieces of cloth that went to make up the collar.
That type of stitching would certainly done the job.

No Problem with the stitching, I have had a Nice M43 dated F43 (Frankfurt} Better Quality than the lazy zig-zag. Nice 43
