      These appear to be WWII.

The thing with medal bars, is that they can be modified to whatever somebody wants it to be. There are a few originals out there. Plus, there are plenty of blank medal bars out there.

The first one seems to have a big gap.. 1st Sino-Japanese war then to 2nd Sino-Japanese war, would that be possible?

Hmmmm...that's true about the gap. Original pieces that appear to have the same ribbon wear/age, but that would be something.

I was told that legit bars always have highest order starting first on left. That would be the Golden Kite so that bar might be suspect

Not always. Here's one from Rich Catalano's site with the Order of the Sacred Treasure coming before before the Golden Kite. The other ribbons on Rich's site show the Golden Kite taking precedence.

Unfortunately both medal bars are fakes.

Only when all orders have the same class (i.e. golden kite/rising sun/sacred treasure).

When classes of orders are not the same the order with higher class take precedence over all others.

What is the purpose of the 'bottle openers' behind each medal?

For better fixation of the medals.

Period pieces put together or the clasp is modern?
